Mexican Baked Eggs
Honey-Lime Strawberries and Avocado
Ingredients
- 5 large eggs, beaten
- ¼ cup gluten-free all-purpose flour
- ½ tsp baking powder
- ¼ cup butter, melted
- ½ (4-oz) can chopped green chiles
- 1 cup cottage cheese
- ½ cup shredded Monterey Jack cheese (or use Cheddar)
Instructions
- Preheat oven to 400°F.
- Whisk together eggs, flour and baking powder. Stir in remaining ingredients.
- Pour into an 8-inch square baking dish.
- Bake 15 minutes.
- Reduce heat to 250°F, and bake 25 minutes or until a knife inserted into center comes out clean.
- Let stand 5 minutes before cutting into squares.
Side Dish Ingredients
- ½ cup halved strawberries
- 1 avocado, pitted and cubed
- 2 tsp fresh lime juice
- 1 tsp extra virgin olive oil
- 1 tsp honey
Side Dish Instructions
- Combine strawberries and avocado in a bowl.
- Whisk together lime juice, oil and honey; drizzle over strawberries and avocado, and toss gently.
