Mexican Baked Eggs

Honey-Lime Strawberries and Avocado

Ingredients

  • 5 large eggs, beaten
  • ¼ cup gluten-free all-purpose flour
  • ½ tsp baking powder
  • ¼ cup butter, melted
  • ½ (4-oz) can chopped green chiles
  • 1 cup cottage cheese
  • ½ cup shredded Monterey Jack cheese (or use Cheddar)

Instructions

  1. Preheat oven to 400°F.
  2. Whisk together eggs, flour and baking powder. Stir in remaining ingredients.
  3. Pour into an 8-inch square baking dish.
  4. Bake 15 minutes.
  5. Reduce heat to 250°F, and bake 25 minutes or until a knife inserted into center comes out clean.
  6. Let stand 5 minutes before cutting into squares.

Side Dish Ingredients

  • ½ cup halved strawberries
  • 1 avocado, pitted and cubed
  • 2 tsp fresh lime juice
  • 1 tsp extra virgin olive oil
  • 1 tsp honey

Side Dish Instructions

  1. Combine strawberries and avocado in a bowl.
  2. Whisk together lime juice, oil and honey; drizzle over strawberries and avocado, and toss gently.
