Asian Turkey Lettuce Wraps

Ingredients

  • ½ (16-oz) pkg ground turkey breast
  • 1 Tbsp vegetable oil (or use sesame oil)
  • ¼ cup reduced-fat sesame-ginger dressing (such as Newman's Own)
  • ½ (6.75-oz) pkg thin rice noodles (see note)
  • 1 small head Bibb lettuce, leaves separated
  • ¾ cup matchstick-cut carrots
  • ¼ cup sliced green onions
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Cook turkey in hot oil in a large skillet over medium-high heat 5 minutes or until browned, stirring to crumble. Stir in 2 Tbsp dressing.
  2. Meanwhile, soak rice noodles according to package directions.
  3. Divide rice noodles and chicken mixture among lettuce leaves; top with carrots, green onions, and cilantro.
  4. Drizzle with 2 Tbsp dressing.

Side Dish Ingredients

  • ½ (10-oz) pkg frozen edamame pods (such as Birds Eye)
  • ⅛ tsp kosher salt

Side Dish Instructions

  1. Cook edamame according to package directions.
  2. Sprinkle immediately with salt.
