Asian Turkey Lettuce Wraps
Steamed Edamame
Ingredients
- ½ (16-oz) pkg ground turkey breast
- 1 Tbsp vegetable oil (or use sesame oil)
- ¼ cup reduced-fat sesame-ginger dressing (such as Newman's Own)
- ½ (6.75-oz) pkg thin rice noodles (see note)
- 1 small head Bibb lettuce, leaves separated
- ¾ cup matchstick-cut carrots
- ¼ cup sliced green onions
- 2 Tbsp chopped fresh cilantro
Instructions
- Cook turkey in hot oil in a large skillet over medium-high heat 5 minutes or until browned, stirring to crumble. Stir in 2 Tbsp dressing.
- Meanwhile, soak rice noodles according to package directions.
- Divide rice noodles and chicken mixture among lettuce leaves; top with carrots, green onions, and cilantro.
- Drizzle with 2 Tbsp dressing.
Side Dish Ingredients
- ½ (10-oz) pkg frozen edamame pods (such as Birds Eye)
- ⅛ tsp kosher salt
Side Dish Instructions
- Cook edamame according to package directions.
- Sprinkle immediately with salt.
