Grilled Beefy Gyro Salad with Pita Croutons

Ingredients

  • 2 lb ground beef 
  • 2 tsp Greek seasoning
  • 1 (12-oz) pkg pita rounds
  • 1 Tbsp olive oil
  • 2 (10-oz) pkg chopped romaine lettuce
  • 1 lb tomatoes, chopped
  • 1 cucumber, thinly sliced
  • ½ small red onion, thinly sliced
  • 1 (5.3-oz) carton Greek yogurt
  • 1 Tbsp fresh lemon juice
  • 1 tsp dried dill
  • ¼ tsp sugar
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup balsamic vinaigrette

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Combine ground beef and Greek seasoning; shape into 6 patties.
  3. Grill patties, 6 to 7 minutes per side or until cooked through.
  4. Brush pitas with oil, and grill, 3 to 4 minutes or until browned and slightly crisp; break or tear into large pieces.
  5. Combine lettuce, tomatoes, cucumber and onion in a large bowl.
  6. Arrange broken pitas on serving plates; top with salad.
  7. Crumble burgers into large pieces and place over salad.
  8. Whisk together yogurt, lemon juice, dill, salt, pepper, and sugar; dollop over salads and drizzle with vinaigrette.
