Seared Hawaiian Tuna Poke

Sesame Brown Rice with Kale

Ingredients

  • 1½ lb tuna steaks
  • 2 Tbsp olive oil
  • 3 Tbsp low-sodium soy sauce
  • 1½ Tbsp rice vinegar
  • 1½ tsp Sriracha hot sauce
  • 1½ tsp refrigerated minced ginger
  • 2 small avocados, pitted and diced
  • 1 cup seedless cucumber, thinly sliced

Instructions

  1. Sear fish in hot oil in a large skillet over high heat 1 to 2 minutes per side. Let stand 1 to 2 minutes. Cut into large cubes.
  2. Combine soy sauce, vinegar, Sriracha and ginger in a large bowl. Add tuna, avocado and cucumber; toss. Serve over brown rice.

Side Dish Ingredients

  • 2 (8.5-oz) pouches microwavable brown basmati rice
  • 2 cups very thinly sliced lacinato kale
  • 1 Tbsp sesame seeds
  • 2 Tbsp low-sodium soy sauce

Side Dish Instructions

  1. Heat rice according to package directions. Stir in kale, sesame seeds and soy sauce.
