Spinach-Apple Turkey Burgers
Carrot FriesIngredients
- 2 Tbsp olive oil, divided
- ¼ cup diced yellow onion
- ¾ cup finely chopped organic apple
- ½ (9-oz) pkg baby spinach
- ¼ tsp dried sage
- ¼ tsp salt
- ¼ tsp pepper
- ½ (20-oz) pkg ground turkey
- 2 Tbsp whole-grain Dijon mustard
- 2 whole-grain hamburger buns
Instructions
- Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat.
- Cook onion, apple, spinach, sage, salt and pepper in hot oil 7 minutes or until apple is soft and liquid is evaporated; remove from heat.
- Wipe skillet clean with a paper towel.
- Combine ground turkey and onion mixture in a bowl; shape mixture into 2 patties.
- Heat 1 Tbsp oil in skillet over medium-high heat; add patties, and cook 5 to 6 minutes per side or until no longer pink.
- Spread mustard on one side of each hamburger bun.
- Place patties on buns.
Side Dish Ingredients
- 1 (12-oz) pkg carrot sticks
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 3 Tbsp organic olive oil mayonnaise
- ½ tsp minced garlic
Side Dish Instructions
- Preheat oven to 450°F.
- Toss carrots with oil, salt and pepper on a greased rimmed baking sheet.
- Bake 15 to 20 minutes, turning once, until carrots are browned and tender.
- Meanwhile, stir together mayonnaise and garlic; serve with carrot fries and turkey burgers.
