Spinach-Apple Turkey Burgers

Ingredients

  • 2 Tbsp olive oil, divided
  • ¼ cup diced yellow onion
  • ¾ cup finely chopped organic apple
  • ½ (9-oz) pkg baby spinach
  • ¼ tsp dried sage
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ (20-oz) pkg ground turkey
  • 2 Tbsp whole-grain Dijon mustard
  • 2 whole-grain hamburger buns

Instructions

  1. Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat.
  2. Cook onion, apple, spinach, sage, salt and pepper in hot oil 7 minutes or until apple is soft and liquid is evaporated; remove from heat.
  3. Wipe skillet clean with a paper towel.
  4. Combine ground turkey and onion mixture in a bowl; shape mixture into 2 patties.
  5. Heat 1 Tbsp oil in skillet over medium-high heat; add patties, and cook 5 to 6 minutes per side or until no longer pink.
  6. Spread mustard on one side of each hamburger bun.
  7. Place patties on buns.

Side Dish Ingredients

  • 1 (12-oz) pkg carrot sticks
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 Tbsp organic olive oil mayonnaise
  • ½ tsp minced garlic

Side Dish Instructions

  1. Preheat oven to 450°F.
  2. Toss carrots with oil, salt and pepper on a greased rimmed baking sheet.
  3. Bake 15 to 20 minutes, turning once, until carrots are browned and tender.
  4. Meanwhile, stir together mayonnaise and garlic; serve with carrot fries and turkey burgers.
