Greek Turkey Patties with Yogurt Sauce

Ingredients

  • ½ lb 93% lean ground turkey
  • ¼ cup panko breadcrumbs
  • ¼ cup crumbled reduced-fat feta cheese
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 egg white
  • ½ tsp dried oregano
  • ¼ cup fat-free plain Greek yogurt
  • 2 Tbsp finely chopped cucumber
  • 1 tsp lemon juice
  • ⅛ tsp salt
  • 1 small clove garlic, minced
  • 2 romaine lettuce leaves

Instructions

  1. Combine turkey, breadcrumbs, cheese, jalapeño, egg white, and oregano; mix with hands until combined. Shape into 2 patties.
  2. Cook patties in a skillet coated with cooking spray over medium-high heat 5 to 7 minutes per side until browned and centers are no longer pink.
  3. Stir together yogurt, cucumber, lemon juice, salt, and garlic.
  4. Serve patties on lettuce with sauce.

  • 1 (2-oz) whole wheat pita bread round
  • 1½ tsp extra virgin olive oil
  • ¼ tsp dried rosemary, crushed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 cups chilled seedless grapes

Side Dish Instructions

  1. Preheat oven to 425°F. Separate pita in half horizontally to make 2 rounds; cut into wedges.
  2. Place wedges, rough sides up, in a single layer on a baking sheet coated with cooking spray.
  3. Brush with oil; sprinkle with rosemary, salt, and pepper.
  4. Bake 8 minutes or until lightly toasted.
  5. Serve with grapes.
