Inside-Out Lasagna

Toasted Garlic Bread

Ingredients

  • 1 (16-oz) pkg rotini pasta
  • 1 lb ground Italian sausage
  • 1 (8-oz) pkg sliced mushrooms
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • ½ tsp crushed red pepper
  • 1 (28-oz) can diced tomatoes with Italian seasonings
  • 1 (10-oz) pkg spinach
  • 1 cup ricotta cheese

Instructions

  1. Cook pasta according to package directions; drain and keep warm.
  2. Meanwhile, cook sausage, mushrooms, onion, garlic and crushed red pepper in a large skillet over medium heat until sausage is browned and crumbly.
  3. Stir in tomatoes; bring to a boil, reduce heat, and simmer 5 minutes.
  4. Gradually stir in spinach until wilted. Add pasta; toss. Divide among serving dishes.
  5. Top each serving with ricotta.

Side Dish Ingredients

  • ¼ cup butter, softened
  • 2 cloves garlic, minced
  • 1 (16-oz) loaf French bread, split lengthwise

Side Dish Instructions

  1. Preheat broiler. Stir together butter and garlic; spread over cut sides of bread.
  2. Broil 2 minutes or until lightly toasted.
