Chicken-Broccoli Salad with Bacon

Ingredients

  • 1 cup mayonnaise
  • 3 Tbsp sugar
  • 2 Tbsp apple cider vinegar
  • 1 rotisserie chicken, chopped
  • 2 cups finely chopped broccoli (raw)
  • ½ cup sweetened dried cranberries
  • ½ cup chopped pecans (or any nuts or sunflower seeds)
  • ¼ tsp salt
  • 8 slices bacon, cooked and crumbled

Instructions

  1. Stir together first 3 ingredients in a large bowl.
  2. Add chicken, broccoli, cranberries, nuts and salt; toss well.
  3. Chill until ready to serve.
  4. Stir in bacon just before serving so it will be crisp.

Side Dish Ingredients

  • 1 cored fresh pineapple, cut into chunks
  • 1 pint blueberries
  • 1 lb strawberries, sliced
  • ½ cantaloupe, cut into chunks
  • 1 (7-oz) pkg pita chips

Side Dish Instructions

  1. Combine 4 types of fruit in a serving bowl, and chill.
  2. Serve pita chips along with the chicken salad.
