Chicken-Broccoli Salad with Bacon
Big Fruit Bowl and Pita ChipsIngredients
- 1 cup mayonnaise
- 3 Tbsp sugar
- 2 Tbsp apple cider vinegar
- 1 rotisserie chicken, chopped
- 2 cups finely chopped broccoli (raw)
- ½ cup sweetened dried cranberries
- ½ cup chopped pecans (or any nuts or sunflower seeds)
- ¼ tsp salt
- 8 slices bacon, cooked and crumbled
Instructions
- Stir together first 3 ingredients in a large bowl.
- Add chicken, broccoli, cranberries, nuts and salt; toss well.
- Chill until ready to serve.
- Stir in bacon just before serving so it will be crisp.
Side Dish Ingredients
- 1 cored fresh pineapple, cut into chunks
- 1 pint blueberries
- 1 lb strawberries, sliced
- ½ cantaloupe, cut into chunks
- 1 (7-oz) pkg pita chips
Side Dish Instructions
- Combine 4 types of fruit in a serving bowl, and chill.
- Serve pita chips along with the chicken salad.
