Quick Pasta with Bacon and Cream Sauce

Ingredients

  • 1 (16-oz) pkg fettuccine
  • 10 slices bacon, chopped
  • 2 cloves garlic, minced
  • 1 (10-oz) pkg spinach
  • 1 (8-oz) pkg cream cheese, softened
  • 1 cup milk
  • ½ cup shredded Parmesan cheese
  • ¼ cup thinly sliced fresh basil

Instructions

  1. Cook pasta according to package directions; drain, reserving 1 cup pasta water.
  2. Cook bacon in a large Dutch oven over medium heat until crisp; using a slotted spoon, remove bacon from pan and drain on paper towels, reserving 2 Tbsp drippings in pan.
  3. Add garlic to drippings and cook over medium heat 30 seconds. Add spinach, stirring until wilted.
  4. Add cream cheese and milk, stirring until cream cheese is melted.
  5. Stir in cheese and pasta; toss. Stir in enough reserved pasta water to thin sauce as desired. Stir in basil.
  6. Season to taste with salt and pepper.

  • 1 (10-oz) pkg Italian salad mix
  • 4 plums, pitted and sliced
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
