Almond Crusted Flounder
Parmesan Cheese Grits with Spinach and Tomatoes
Ingredients
- ¾ cup slivered almonds
- ½ cup panko breadcrumbs
- 2 tsp Old Bay seasoning
- 2 Tbsp Dijon mustard
- 6 (6-oz) flounder fillets
- ¼ cup vegetable oil
Instructions
- Process almonds, breadcrumbs and seasoning in a food processor until almonds are finely ground. Transfer to a shallow dish.
- Brush fish with mustard; dredge in almond mixture to coat.
- Heat 2 Tbsp oil in a large nonstick skillet over medium heat. Add half of fish, and cook 3 to 4 minutes per side or until fish flakes easily with a fork.
- Repeat process with remaining oil and fish.
Side Dish Ingredients
- 1½ cups quick-cooking grits
- 1 (5-oz) pkg baby spinach
- ½ cup shredded Parmesan cheese
- 2 Roma tomatoes, chopped
Side Dish Instructions
- Cook grits according to package directions.
- Stir in spinach and cheese; season to taste with salt and pepper.
- Top each serving with tomatoes.
