Almond Crusted Flounder

Parmesan Cheese Grits with Spinach and Tomatoes

Ingredients

  • ¾ cup slivered almonds
  • ½ cup panko breadcrumbs
  • 2 tsp Old Bay seasoning
  • 2 Tbsp Dijon mustard
  • 6 (6-oz) flounder fillets
  • ¼ cup vegetable oil

Instructions

  1. Process almonds, breadcrumbs and seasoning in a food processor until almonds are finely ground. Transfer to a shallow dish.
  2. Brush fish with mustard; dredge in almond mixture to coat.
  3. Heat 2 Tbsp oil in a large nonstick skillet over medium heat. Add half of fish, and cook 3 to 4 minutes per side or until fish flakes easily with a fork.
  4. Repeat process with remaining oil and fish.

Side Dish Ingredients

  • 1½ cups quick-cooking grits
  • 1 (5-oz) pkg baby spinach
  • ½ cup shredded Parmesan cheese
  • 2 Roma tomatoes, chopped

Side Dish Instructions

  1. Cook grits according to package directions.
  2. Stir in spinach and cheese; season to taste with salt and pepper.
  3. Top each serving with tomatoes.
