Super-Fast Black Bean and Beef Soup
Easy Cheese Quesadillas
Ingredients
- ⅓ lb ground beef
- 2 (15.5-oz) cans black beans, drained and rinsed
- 1 (16-oz) container refrigerated fresh salsa
- 1 (14.5-oz) can chicken broth
- ¼ cup sour cream
- 2 Tbsp chopped fresh cilantro
- ½ lime, cut into wedges
Instructions
- Cook ground beef in a Dutch oven over medium heat, stirring until browned and crumbly.
- Drain and return to pan.
- Add beans, salsa and broth; bring to a boil, reduce heat, and simmer 10 minutes.
- Top each serving with sour cream and cilantro; garnish with a lime wedge.

- ⅔ cup shredded Monterey Jack cheese
- 2 (8-inch) soft taco-size flour tortillas
Side Dish Instructions
- Sprinkle ⅓ cup cheese over half of each tortilla. Fold tortillas in half.
- Coat a large nonstick skillet with cooking spray. Place 2 tortillas in skillet; coat with cooking spray, and cook 2 to 3 minutes per side or until browned.
