Flat Iron Steak with Sour Cream Sauce

Ingredients

  • ⅓ cup sour cream
  • 3 Tbsp Italian dressing
  • 2 Tbsp grated Parmesan cheese (from a can)
  • ½ onion, thinly sliced
  • 1 Tbsp bottled minced garlic
  • 1 Tbsp olive oil
  • ½ lb flat iron steak, trimmed

Instructions

  1. Stir together sour cream, 2 Tbsp Italian dressing and cheese in a bowl; season to taste with salt and pepper.
  2. Heat remaining 1 Tbsp dressing in a nonstick skillet; add onion and garlic, and cook, stirring, 10 minutes or until onion is very tender. Remove from skillet and set aside.
  3. Heat oil in same skillet over medium-high heat; season steak with salt and pepper.
  4. Add steak to skillet, and cook 5 to 6 minutes per side or to desired doneness.
  5. Let steak stand 5 minutes before thinly slicing across the grain; serve topped with onions and sour cream sauce.

  • ½ (24-oz) bag frozen roasted garlic-and-herb homestyle potato wedges
  • 1½ Tbsp olive oil
  • 1 Tbsp bottled minced garlic
  • 1 bunch broccolini, trimmed
  • 2 Tbsp water

Side Dish Instructions

  1. Bake potatoes according to package directions.
  2. Heat oil in a skillet over medium heat; add garlic and cook 1 minute.
  3. Add broccolini and water; cover, and cook 3 to 4 minutes or until crisp-tender. Season to taste.
