Favorite Green Chile Frito Pies

Ingredients
- 1½ lb ground beef
- 1 (16-oz) jar salsa verde
- 1 (15-oz) can cannellini beans, rinsed and drained
- 1 (12-oz) pkg frozen corn
- 1 (7-oz) can chopped green chiles
- 2 Tbsp ground cumin
- 2 Tbsp fresh lime juice
- 1 (9.25-oz) pkg fritos corn chips
- 1 (8-oz) pkg shredded Monterey Jack cheese
- 1 (8-oz) pkg shredded lettuce
- 1 (8-oz) carton sour cream
Instructions
- Cook ground beef in a large skillet over medium heat until beef is browned and crumbly; drain, and return to skillet.
- Stir in salsa verde, beans, corn, chiles and cumin; bring to a boil, reduce heat, and simmer 5 minutes or until very thick. Stir in lime juice.
- Divide corn chips among serving bowls; top each with meat mixture, cheese, lettuce and sour cream.
