Green Chile Chicken Soup
Avocado, Radish and Tomato Salad
Ingredients
- 1½ lb boneless, skinless chicken breasts, cubed
- 1 onion, chopped
- 2 zucchini, halved lengthwise and sliced
- 3 carrots, chopped
- ½ head green cabbage, chopped
- 3 (32-oz) cartons organic chicken bone broth (or use organic chicken broth)
- 1 (28-oz) can organic fire-roasted crushed tomatoes
- 1 (20-oz) can diced tomatoes and green chiles
- ½ cup chopped fresh cilantro
- 2 Tbsp ground cumin
- ½ tsp salt
- 1 Tbsp fresh lime juice
Instructions
- Combine all ingredients, except lime juice, in a large Dutch oven; bring to a boil over medium-high heat.
- Reduce heat, and simmer 30 minutes or until cabbage is tender.
- Stir in lime juice before serving.
Side Dish Ingredients
- 4 Roma tomatoes, cut into wedges
- 2 avocados, pitted and sliced
- 4 radishes, thinly sliced
- 2 Tbsp extra virgin olive oil
- 1½ Tbsp fresh lime juice
Side Dish Instructions
- Combine all ingredients in a serving bowl; add salt and pepper to taste.
- Let stand 5 minutes before serving.
