Cottage Pie

Green Beans and Applesauce

Ingredients

  • 2 lb lean ground beef (or ground turkey)
  • 1 small yellow onion, finely chopped (optional)
  • 1 (16-oz) pkg frozen peas and carrots
  • 1 (14.5-oz) can beef broth
  • 2 Tbsp cornstarch
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp tomato paste
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (24-oz) container refrigerated mashed potatoes

Instructions

  1. Cook ground beef and, if desired, onion in a large skillet over medium heat 8 minutes or until meat is browned.
  2. Add peas and carrots.
  3. Whisk together broth, cornstarch, Worcestershire sauce, tomato paste, and salt and pepper; add to skillet.
  4. Cook 3 to 5 minutes or until sauce is thickened; transfer mixture to a 3-quart baking dish.
  5. Meanwhile, preheat broiler; heat mashed potatoes in microwave according to package directions.
  6. Spread mashed potatoes over beef filling.
  7. Broil 8 to 10 minutes on second oven shelf until browned and bubbly.

Side Dish Ingredients

  • 1 (19-oz) pkg family-size frozen cut green beans
  • 1½ Tbsp butter
  • 1 (23-oz) jar unsweetened applesauce, well chilled

Side Dish Instructions

  1. Cook green beans according to package directions; toss with butter until melted.
  2. Season with salt and pepper to taste.
