Cottage Pie
Green Beans and Applesauce
Ingredients
- 2 lb lean ground beef (or ground turkey)
- 1 small yellow onion, finely chopped (optional)
- 1 (16-oz) pkg frozen peas and carrots
- 1 (14.5-oz) can beef broth
- 2 Tbsp cornstarch
- 2 Tbsp Worcestershire sauce
- 1 Tbsp tomato paste
- ½ tsp salt
- ½ tsp pepper
- 1 (24-oz) container refrigerated mashed potatoes
Instructions
- Cook ground beef and, if desired, onion in a large skillet over medium heat 8 minutes or until meat is browned.
- Add peas and carrots.
- Whisk together broth, cornstarch, Worcestershire sauce, tomato paste, and salt and pepper; add to skillet.
- Cook 3 to 5 minutes or until sauce is thickened; transfer mixture to a 3-quart baking dish.
- Meanwhile, preheat broiler; heat mashed potatoes in microwave according to package directions.
- Spread mashed potatoes over beef filling.
- Broil 8 to 10 minutes on second oven shelf until browned and bubbly.
Side Dish Ingredients
- 1 (19-oz) pkg family-size frozen cut green beans
- 1½ Tbsp butter
- 1 (23-oz) jar unsweetened applesauce, well chilled
Side Dish Instructions
- Cook green beans according to package directions; toss with butter until melted.
- Season with salt and pepper to taste.
