Margherita Pizzas with Arugula Salad
Honey-Basil TomatoesIngredients
- 2 (13.9-oz) pkg frozen Margherita-style thin-crust pizzas (such as Newman's Own)
- ¼ cup pine nuts
- 1 (5-oz) pkg baby arugula
- 2 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- ¼ tsp pepper
- 2 oz thinly sliced prosciutto
- ½ cup shredded Parmesan cheese (or use shaved Parmesan)
Instructions
- Bake pizzas according to package directions.
- Toast nuts in a skillet over medium heat 2 to 3 minutes or until golden and fragrant, stirring occasionally.
- Toss together arugula, oil, juice, nuts and pepper in a large bowl. Top pizzas with prosciutto, arugula salad and cheese.
Side Dish Ingredients
- 2 pints grape tomatoes
- ½ cup fresh basil
- 3 Tbsp balsamic vinegar
- ½ Tbsp honey
- Dash of coarse sea salt
Side Dish Instructions
- Place tomatoes and basil in a serving bowl.
- Whisk together vinegar, honey and salt. Drizzle over tomatoes; toss.
