Margherita Pizzas with Arugula Salad

Ingredients

  • 2 (13.9-oz) pkg frozen Margherita-style thin-crust pizzas (such as Newman's Own)
  • ¼ cup pine nuts
  • 1 (5-oz) pkg baby arugula
  • 2 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • ¼ tsp pepper
  • 2 oz thinly sliced prosciutto
  • ½ cup shredded Parmesan cheese (or use shaved Parmesan)

Instructions

  1. Bake pizzas according to package directions.
  2. Toast nuts in a skillet over medium heat 2 to 3 minutes or until golden and fragrant, stirring occasionally.
  3. Toss together arugula, oil, juice, nuts and pepper in a large bowl. Top pizzas with prosciutto, arugula salad and cheese.

Side Dish Ingredients

  • 2 pints grape tomatoes
  • ½ cup fresh basil
  • 3 Tbsp balsamic vinegar
  • ½ Tbsp honey
  • Dash of coarse sea salt

Side Dish Instructions

  1. Place tomatoes and basil in a serving bowl.
  2. Whisk together vinegar, honey and salt. Drizzle over tomatoes; toss.
