Honey-Soy Flank Steak

Ingredients

  • 1½ lb flank steak
  • ¼ cup honey
  • 3 Tbsp low-sodium soy sauce
  • 2 Tbsp rice vinegar
  • ½ tsp crushed red pepper
  • 1 clove garlic, minced

Instructions

  1. Place steak in a large zip-top plastic freezer bag.
  2. Whisk together honey, soy sauce, vinegar, red pepper and garlic. Pour marinade over steak; seal bag, and turn to coat. Chill overnight.
  3. Preheat grill to medium-high heat. Remove steak from marinade; discard marinade.
  4. Grill steak, covered with grill lid, 6 minutes per side or to desired doneness.
  5. Let stand 10 minutes. Thinly slice across the grain.

Side Dish Ingredients

  • 1½ lb green beans, cut into 1-inch pieces
  • 2 Tbsp reduced-fat mayonnaise
  • 1 Tbsp vegetable oil
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp rice vinegar
  • 2 carrots, grated
  • 2 cloves garlic, minced
  • 2 Tbsp chopped fresh cilantro
  • 1½ lb russet potatoes, cut into 2-inch pieces
  • ¾ cup fat-free milk
  • ¼ cup light butter
  • 2 green onions, thinly sliced

Side Dish Instructions

  1. Cook green beans in boiling water to cover in a saucepan 4 minutes or until crisp-tender. Drain; rinse under cold water to cool.
  2. Whisk together mayonnaise, oil, soy sauce and vinegar in a large bowl. Stir in beans, carrots, and garlic. Sprinkle with cilantro. Chill until ready to serve.
  3. Bring potatoes and water to cover to a boil; boil 15 minutes or until very tender. Drain.
  4. Add milk, butter, and ¾ tsp each salt and pepper to potatoes. Mash with a fork or potato masher until smooth. Stir in green onions.
