Marinate Overnight and Grill
Honey-Soy Flank Steak
Asian Green Bean Salad and Green Onion Mashed Potatoes
Ingredients
- 1½ lb flank steak
- ¼ cup honey
- 3 Tbsp low-sodium soy sauce
- 2 Tbsp rice vinegar
- ½ tsp crushed red pepper
- 1 clove garlic, minced
Instructions
- Place steak in a large zip-top plastic freezer bag.
- Whisk together honey, soy sauce, vinegar, red pepper and garlic. Pour marinade over steak; seal bag, and turn to coat. Chill overnight.
- Preheat grill to medium-high heat. Remove steak from marinade; discard marinade.
- Grill steak, covered with grill lid, 6 minutes per side or to desired doneness.
- Let stand 10 minutes. Thinly slice across the grain.
Side Dish Ingredients
- 1½ lb green beans, cut into 1-inch pieces
- 2 Tbsp reduced-fat mayonnaise
- 1 Tbsp vegetable oil
- 1 Tbsp low-sodium soy sauce
- 1 Tbsp rice vinegar
- 2 carrots, grated
- 2 cloves garlic, minced
- 2 Tbsp chopped fresh cilantro
- 1½ lb russet potatoes, cut into 2-inch pieces
- ¾ cup fat-free milk
- ¼ cup light butter
- 2 green onions, thinly sliced
Side Dish Instructions
- Cook green beans in boiling water to cover in a saucepan 4 minutes or until crisp-tender. Drain; rinse under cold water to cool.
- Whisk together mayonnaise, oil, soy sauce and vinegar in a large bowl. Stir in beans, carrots, and garlic. Sprinkle with cilantro. Chill until ready to serve.
- Bring potatoes and water to cover to a boil; boil 15 minutes or until very tender. Drain.
- Add milk, butter, and ¾ tsp each salt and pepper to potatoes. Mash with a fork or potato masher until smooth. Stir in green onions.
