Strawberry Chia Pudding

Ingredients
- ⅓ cup chia seeds
- 1 (13.5-oz) can unsweetened coconut milk
- 6 Tbsp raw honey, divided
- 1 Tbsp fresh lemon juice
- 1½ tsp pure vanilla extract
- ⅛ tsp salt
- ¼ cup chopped raw almonds
- 1 (16-oz) pkg strawberries, sliced
- ½ tsp grated lemon rind
Instructions
- Combine chia seeds, coconut milk, 2 Tbsp honey, lemon juice, vanilla and salt.
- Cover and refrigerate overnight.
- Toast almonds in a dry skillet over medium heat 2 to 3 minutes until golden and fragrant.
- Divide pudding among 4 serving bowls.
- Top evenly with remaining 4 Tbsp honey, the strawberries, toasted almonds, and lemon rind.
