Strawberry Chia Pudding

Ingredients

  • ⅓ cup chia seeds
  • 1 (13.5-oz) can unsweetened coconut milk
  • 6 Tbsp raw honey, divided
  • 1 Tbsp fresh lemon juice
  • 1½ tsp pure vanilla extract
  • ⅛ tsp salt
  • ¼ cup chopped raw almonds
  • 1 (16-oz) pkg strawberries, sliced
  • ½ tsp grated lemon rind

Instructions

  1. Combine chia seeds, coconut milk, 2 Tbsp honey, lemon juice, vanilla and salt.
  2. Cover and refrigerate overnight.
  3. Toast almonds in a dry skillet over medium heat 2 to 3 minutes until golden and fragrant.
  4. Divide pudding among 4 serving bowls.
  5. Top evenly with remaining 4 Tbsp honey, the strawberries, toasted almonds, and lemon rind.
