Cilantro-Lime Tuna Salad in Avocados

Ingredients

  • ⅓ cup extra virgin olive oil
  • ¼ cup chopped fresh cilantro
  • 1 clove garlic, minced
  • 1½ Tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1 tsp raw honey
  • ¼ tsp salt
  • ¼ tsp pepper
  • 4 (5-oz) cans wild-caught albacore tuna, drained
  • 2 avocados, halved and pitted

Instructions

  1. Whisk together oil, cilantro, garlic, lime juice, cumin, honey, salt and pepper in a bowl. Add tuna; toss to coat.
  2. Mound tuna salad evenly into avocado halves to serve.

Side Dish Ingredients

  • 3 kiwifruit, peeled and sliced
  • 1½ cups sliced strawberries

Side Dish Instructions

  1. Combine kiwi and strawberries in a large bowl; toss.
