African Beef Stew

Ingredients
- 2 Tbsp avocado oil
- 3 lb beef stew meat
- 1 large onion, chopped
- 4 large carrots, chopped
- 2 tsp ground cumin
- 2 tsp dry mustard
- 2 tsp green curry paste
- 1 tsp ground ginger
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper
- 2 (13.5-oz) cans unsweetened coconut milk
- ¼ cup chopped fresh cilantro
Instructions
- Heat oil in a large skillet over medium-high heat.
- Brown beef, in batches, 2 minutes; transfer to a 5- to 7-quart slow cooker.
- Add onion, carrots, cumin, mustard, curry paste, ginger, salt, black pepper, cayenne pepper and coconut milk; stir to combine.
- Cover and cook on LOW 6 to 8 hours or until beef is tender.
- Stir in cilantro just before serving.
