African Beef Stew

Ingredients

  • 2 Tbsp avocado oil
  • 3 lb beef stew meat
  • 1 large onion, chopped
  • 4 large carrots, chopped
  • 2 tsp ground cumin
  • 2 tsp dry mustard
  • 2 tsp green curry paste
  • 1 tsp ground ginger
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper
  • 2 (13.5-oz) cans unsweetened coconut milk
  • ¼ cup chopped fresh cilantro

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Brown beef, in batches, 2 minutes; transfer to a 5- to 7-quart slow cooker.
  3. Add onion, carrots, cumin, mustard, curry paste, ginger, salt, black pepper, cayenne pepper and coconut milk; stir to combine.
  4. Cover and cook on LOW 6 to 8 hours or until beef is tender.
  5. Stir in cilantro just before serving.
