Turkey Nachos Grande

Ingredients

  • 1 lb lean ground turkey
  • 1½ cups diced onion
  • 1 (15-oz) can low-sodium black beans, drained and rinsed
  • 1 (16-oz) container refrigerated salsa
  • 1 (6-oz) pkg brown rice tortilla chips
  • ¾ cup shredded reduced-fat Mexican-blend cheese
  • ¼ cup reduced-fat sour cream
  • 2 Tbsp water
  • 1 (8-oz) container guacamole

Instructions

  1. Preheat broiler. Cook turkey and onion in a large skillet over medium heat until turkey is browned and crumbly; drain and return to skillet.
  2. Add beans and half of salsa; bring to a boil, reduce heat, and simmer 10 minutes.
  3. Arrange chips on a large rimmed baking sheet. Top with turkey mixture; sprinkle with cheese.
  4. Broil 1 to 2 minutes or until cheese is melted and bubbly.
  5. Combine sour cream and water. Top nachos with guacamole and remaining salsa. Drizzle with sour cream mixture.
