Lemon-Garlic Shrimp Pasta

Ingredients

  • 1 (16-oz) pkg linguine
  • ½ cup butter
  • 1½ lb fresh or frozen medium white shrimp, thawed, peeled and deveined
  • 3 cloves garlic, minced
  • ½ tsp crushed red pepper
  • 1 pint grape tomatoes, halved
  • 1 lb asparagus, trimmed and cut into 2-inch pieces
  • 3 Tbsp fresh lemon juice
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Cook pasta according to package directions; set aside, and keep warm.
  2. Melt butter in a large nonstick skillet over medium-high heat.
  3. Season shrimp with salt and pepper; add to skillet, and cook 2 minutes or just until pink.
  4. Remove from skillet; set aside.
  5. Add garlic and red pepper to skillet; cook 30 seconds.
  6. Add tomatoes and asparagus; cook, stirring, 4 minutes.
  7. Add lemon juice, parsley, and shrimp; cook 1 minute, just until shrimp are firm.
  8. Toss with hot cooked pasta.
