Chicken Breasts with Avocado Mayonnaise

Ingredients

  • 1 avocado, pitted and mashed
  • ¼ cup mayonnaise
  • 2 tsp fresh lime juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 6 boneless, skinless chicken breasts
  • 1½ Tbsp Jerk seasoning

Instructions

  1. Preheat grill or grill pan to medium-high heat. Process avocado, mayonnaise, lime juice, garlic, salt and pepper in a food processor or mini chopper until smooth.
  2. Sprinkle chicken with Jerk seasoning and desired amount of salt and pepper. Grill, covered with grill lid, 6 minutes per side or until done.
  3. Top chicken with avocado mayonnaise.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw
  • 1 mango, diced
  • 1 cup chopped pineapple
  • ¼ cup mayonnaise
  • 1 Tbsp fresh lime juice
  • ⅛ tsp cayenne pepper (optional)

Side Dish Instructions

  1. Toss together all ingredients and salt and pepper to taste in a large bowl.
