Chicken Breasts with Avocado Mayonnaise
Tropical Slaw
Ingredients
- 1 avocado, pitted and mashed
- ¼ cup mayonnaise
- 2 tsp fresh lime juice
- 1 clove garlic, minced
- ¼ tsp salt
- ⅛ tsp pepper
- 6 boneless, skinless chicken breasts
- 1½ Tbsp Jerk seasoning
Instructions
- Preheat grill or grill pan to medium-high heat. Process avocado, mayonnaise, lime juice, garlic, salt and pepper in a food processor or mini chopper until smooth.
- Sprinkle chicken with Jerk seasoning and desired amount of salt and pepper. Grill, covered with grill lid, 6 minutes per side or until done.
- Top chicken with avocado mayonnaise.
Side Dish Ingredients
- 1 (16-oz) pkg tricolor coleslaw
- 1 mango, diced
- 1 cup chopped pineapple
- ¼ cup mayonnaise
- 1 Tbsp fresh lime juice
- ⅛ tsp cayenne pepper (optional)
Side Dish Instructions
- Toss together all ingredients and salt and pepper to taste in a large bowl.
