Tortellini with Sausage, Spinach and Mushrooms

Ingredients

  •  2 (9-oz) pkg refrigerated whole wheat three-cheese tortellini (such as Buitoni)
  • 1 (12-oz) pkg mild Italian chicken sausage links, sliced
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 2 cloves garlic, minced
  • 1 (5-oz) pkg baby spinach
  • ¼ cup dry white wine
  • ⅓ cup chopped walnuts
  • 2 Tbsp freshly grated Parmesan cheese
  • ¼ tsp pepper

Instructions

  1. Cook tortellini according to package directions; drain, reserving ½ cup pasta water.
  2. Meanwhile, cook sausage, mushrooms and garlic in a nonstick skillet over medium heat 8 minutes or until sausage is browned.
  3. Add spinach and wine; cook 2 minutes or until spinach wilts. Stir in tortellini and reserved ½ cup pasta water. Sprinkle with walnuts, cheese and pepper.
