Meatless Meal
One-Pot Spring Pea and Prosciutto Fettuccine

Ingredients
- 1 (3-oz) pkg sliced prosciutto
- 2½ cups unsalted chicken stock
- 1½ cups milk
- 1 (12-oz) pkg whole wheat fettuccine
- 2 cups fresh or frozen green peas
- 4 oz cream cheese
- ½ tsp grated lemon rind
- 1 Tbsp fresh lemon juice
- 1 cup freshly grated Parmesan cheese
Instructions
- Place prosciutto in a single layer on a paper towel-lined plate. Cover with another layer of paper towels. Microwave 1 to 2 minutes or until crisp. Crumble.
- Bring stock, milk and pasta to a boil in a Dutch oven; reduce heat, and simmer, stirring often, 10 minutes or until pasta is al dente, adding peas during last 2 minutes of cooking.
- Stir in cream cheese, lemon rind, lemon juice, ½ cup Parmesan cheese and pepper to taste, stirring until cheese is melted.
- Sprinkle with prosciutto and ½ cup Parmesan cheese.
