Zucchini Turkey Burgers
Cheesy Cauliflower Tots
Ingredients
- 1 zucchini
- 2 shallots, finely chopped
- 1¼ lb ground turkey
- ½ tsp kosher salt
- ½ tsp pepper
- ½ cup whole wheat panko breadcrumbs
- 1 large egg, lightly beaten
- 1 (6.5-oz) pkg reduced-fat garlic-herb spreadable cheese (such as Boursin Light)
- 6 whole wheat hamburger buns, split and toasted
- 12 Bibb lettuce leaves
Instructions
- Grate zucchini on large holes of a box grater. Squeeze between layers of paper towels to remove excess moisture.
- Combine zucchini, shallots, turkey, salt, pepper, panko, and egg in a large bowl. Shape into 6 patties.
- Preheat grill or grill pan to medium-high heat. Grill patties, covered with grill lid, 5 to 6 minutes per side or until no longer pink.
- Spread cheese on cut sides of buns. Serve burgers on buns with lettuce.
Side Dish Ingredients
- 1½ (16-oz) pkg frozen cauliflower tots (such as Green Giant)
- ¼ cup finely shredded Parmesan cheese
- ¼ tsp pepper
Side Dish Instructions
- Bake tots according to package directions. Sprinkle with cheese and pepper. Bake 2 minutes or until cheese melts.
