Zucchini Turkey Burgers

Ingredients

  • 1 zucchini
  • 2 shallots, finely chopped
  • 1¼ lb ground turkey
  • ½ tsp kosher salt
  • ½ tsp pepper
  • ½ cup whole wheat panko breadcrumbs
  • 1 large egg, lightly beaten
  • 1 (6.5-oz) pkg reduced-fat garlic-herb spreadable cheese (such as Boursin Light)
  • 6 whole wheat hamburger buns, split and toasted
  • 12 Bibb lettuce leaves

Instructions

  1. Grate zucchini on large holes of a box grater. Squeeze between layers of paper towels to remove excess moisture.
  2. Combine zucchini, shallots, turkey, salt, pepper, panko, and egg in a large bowl. Shape into 6 patties.
  3. Preheat grill or grill pan to medium-high heat. Grill patties, covered with grill lid, 5 to 6 minutes per side or until no longer pink.
  4. Spread cheese on cut sides of buns. Serve burgers on buns with lettuce.

Side Dish Ingredients

  • 1½ (16-oz) pkg frozen cauliflower tots (such as Green Giant)
  • ¼ cup finely shredded Parmesan cheese
  • ¼ tsp pepper

Side Dish Instructions

  1. Bake tots according to package directions. Sprinkle with cheese and pepper. Bake 2 minutes or until cheese melts.
