Nacho Cheese Chicken Tenders with Sour Cream Salsa

Ingredients

  • 1 (10-oz) pkg nacho cheese-flavored tortilla chips, crushed
  • 2 large eggs
  • 2 Tbsp milk
  • 1 cup all-purpose flour
  • 1 Tbsp chili powder
  • 1 tsp salt
  • 2 lb chicken tenderloins, cut into 1-inch pieces
  • 1 (8-oz) carton sour cream
  • 1 cup refrigerated salsa

Instructions

  1. Preheat oven to 400°F. Line a rimmed baking sheet with foil; place a wire cooling rack on foil, and spray rack with cooking spray.
  2. Place crushed chips in a shallow dish. Whisk together eggs and milk in a separate shallow dish. Stir together flour, chili powder, and salt in a third shallow dish.
  3. Coat chicken in flour mixture, gently shaking off excess.
  4. Dip chicken in egg mixture to coat; dredge in crushed chips, pressing gently to adhere. Place chicken on rack.
  5. Bake 15 to 20 minutes or until chicken is done.
  6. Stir together sour cream and salsa; serve as dipping sauce with chicken.
