Nacho Cheese Chicken Tenders with Sour Cream Salsa

Ingredients
- 1 (10-oz) pkg nacho cheese-flavored tortilla chips, crushed
- 2 large eggs
- 2 Tbsp milk
- 1 cup all-purpose flour
- 1 Tbsp chili powder
- 1 tsp salt
- 2 lb chicken tenderloins, cut into 1-inch pieces
- 1 (8-oz) carton sour cream
- 1 cup refrigerated salsa
Instructions
- Preheat oven to 400°F. Line a rimmed baking sheet with foil; place a wire cooling rack on foil, and spray rack with cooking spray.
- Place crushed chips in a shallow dish. Whisk together eggs and milk in a separate shallow dish. Stir together flour, chili powder, and salt in a third shallow dish.
- Coat chicken in flour mixture, gently shaking off excess.
- Dip chicken in egg mixture to coat; dredge in crushed chips, pressing gently to adhere. Place chicken on rack.
- Bake 15 to 20 minutes or until chicken is done.
- Stir together sour cream and salsa; serve as dipping sauce with chicken.
