Grilled Pork Chops

Brown Rice and Garlicky Sugar Snap Peas

Ingredients

  • 2 Tbsp balsamic vinegar
  • 2 Tbsp fresh lime juice
  • 2 Tbsp honey
  • 1 tsp dried thyme (or use 1 Tbsp fresh)
  • 6 boneless pork loin chops, well trimmed

Instructions

  1. Preheat grill to medium-high heat. Combine vinegar, lime juice, honey and thyme; brush onto pork. Sprinkle lightly with salt and pepper.
  2. Grill pork, covered with grill lid, 3 to 4 minutes per side or until done.

Side Dish Ingredients

  • 1 cup brown jasmine rice
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1½ lb organic sugar snap peas, trimmed
  • ½ cup low-sodium chicken broth

Side Dish Instructions

  1. Cook rice according to package directions. Sprinkle with salt and pepper to taste.
  2. Sauté garlic in hot oil in a large nonstick skillet over medium heat 1 minute; add peas and broth. Cook 5 minutes or until peas are tender and broth is evaporated.
