Maple-Pecan Pork Chops

Ingredients

  • 1 clove garlic, minced
  • 2 Tbsp pure maple syrup
  • ½ Tbsp Dijon mustard
  • 1 tsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup finely chopped raw pecans
  • 2 (6-oz) boneless center-cut pork loin chops
  • ½ Tbsp avocado oil

Instructions

  1. Preheat oven to 400°F. Combine garlic, syrup, mustard, lemon juice, salt and pepper in a bowl. Brush over both sides of pork; sprinkle with pecans. Place pork on an oil-rubbed rack on a roasting pan.
  2. Bake 10 to 12 minutes or until done.

  • 1 lb broccoli rabe (or use broccoli florets)
  • 1 Tbsp avocado oil
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ Tbsp fresh lemon juice

Side Dish Instructions

  1. Cook broccoli rabe in hot oil in a large skillet over medium-high heat 4 minutes, stirring often. Stir in garlic, salt and pepper.
  2. Cook 3 minutes or until broccoli rabe is crisp-tender. Remove from heat; drizzle with lemon juice.
