Skillet Mozzarella Chicken Caprese

Ingredients

  • 6 boneless, skinless chicken breasts
  • 2 Tbsp extra virgin olive oil
  • 1 (24-oz) jar marinara sauce
  • 1 (8-oz) ball fresh mozzarella cheese, thinly sliced
  • 1 pint grape tomatoes, cut in half
  • 1 (1-oz) pkg fresh basil, thinly sliced
  • 2 Tbsp balsamic glaze (or use balsamic vinegar)

Instructions

  1. Preheat broiler. Cook chicken in hot oil in a large cast-iron skillet over medium-high heat 4 minutes per side.
  2. Spoon marinara sauce over chicken; cook 5 minutes or until chicken is done. Layer cheese over chicken; sprinkle with tomatoes.
  3. Broil 1 to 2 minutes or until cheese is bubbly and browned. Sprinkle with basil; drizzle with glaze. Serve over Basil Zucchini "Noodles.".

  • 4 medium zucchini, cut lengthwise into ¼-inch-thick slices
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 Tbsp chopped fresh basil

Side Dish Instructions

  1. Stack 3 zucchini slices at a time, and cut lengthwise into thin strips to resemble strands of pasta.
  2. Sauté zucchini and garlic in hot oil in a large skillet over medium-high heat 3 minutes or just until tender. Stir in basil and salt and pepper to taste.
