Bacon-Cheddar Chicken

Crispy Smashed Potatoes and Steamed Broccoli

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 Tbsp barbecue seasoning
  • 1 (12-oz) pkg bacon
  • 1 (8-oz) block Cheddar cheese, shredded

Instructions

  1. Preheat oven to 400°F.
  2. Pound chicken to an even thickness. Rub chicken breasts with barbecue seasoning; place in a single layer in a greased 13-x 9-inch baking dish.
  3. Cut bacon strips in half; arrange over chicken.
  4. Bake 25 to 30 minutes or until chicken is done and bacon is crisp. Sprinkle with cheese; bake 5 minutes longer or until cheese is melted.

  • 2 lb small red potatoes
  • 3 Tbsp olive oil
  • 1 tsp garlic salt
  • ½ tsp pepper
  • 1 (12-oz) pkg frozen broccoli florets

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Cook potatoes in boiling water 10 minutes or until just tender; drain and place on a greased rimmed baking sheet.
  3. Using a potato masher, mash each potato until flattened, but still intact. Drizzle with oil, garlic salt and pepper. Bake 15 to 20 minutes or until edges of potatoes are browned and crispy.
  4. Steam broccoli according to package directions; season to taste.
