Herbed Biscuits with Pimento Cheese

Ingredients

  • 3½ cups self-rising flour
  • 2 Tbsp chopped fresh chives
  • 2 Tbsp chopped fresh dill
  • 1 tsp pepper
  • 1 cup cold butter, cubed
  • 1¼ cups cold buttermilk
  • ¼ cup butter, melted
  • 1 (16-oz) carton pimento cheese

Instructions

  1. Preheat oven to 450°F.
  2. Stir together flour, chives, dill and pepper in a large bowl. Cut in butter with a pastry blender or two knives until mixture is crumbly.
  3. Slowly add buttermilk, stirring just until dry ingredients are incorporated.
  4. Turn out dough onto a lightly floured surface; knead 2 to 3 times just until dough comes together.
  5. Pat out dough to 1-inch thickness.
  6. Using a 2½-inch round cutter, cut dough, re-rolling scraps once. Place on a greased baking sheet and brush tops of biscuits with melted butter.
  7. Bake 12 to 15 minutes or until biscuits are golden brown.
  8. Serve warm biscuits with pimento cheese.
