Herbed Biscuits with Pimento Cheese

Ingredients
- 3½ cups self-rising flour
- 2 Tbsp chopped fresh chives
- 2 Tbsp chopped fresh dill
- 1 tsp pepper
- 1 cup cold butter, cubed
- 1¼ cups cold buttermilk
- ¼ cup butter, melted
- 1 (16-oz) carton pimento cheese
Instructions
- Preheat oven to 450°F.
- Stir together flour, chives, dill and pepper in a large bowl. Cut in butter with a pastry blender or two knives until mixture is crumbly.
- Slowly add buttermilk, stirring just until dry ingredients are incorporated.
- Turn out dough onto a lightly floured surface; knead 2 to 3 times just until dough comes together.
- Pat out dough to 1-inch thickness.
- Using a 2½-inch round cutter, cut dough, re-rolling scraps once. Place on a greased baking sheet and brush tops of biscuits with melted butter.
- Bake 12 to 15 minutes or until biscuits are golden brown.
- Serve warm biscuits with pimento cheese.
