Ground Beef and Potato Casserole

Ingredients

  • 2 lb ground beef
  • 1 cup chopped onion
  • 2 cloves garlic, chopped
  • 1 (10.75-oz) can cream of mushroom soup
  • 1 cup sour cream
  • 2 lb Russet potatoes, thinly sliced
  • 1 (8-oz) pkg shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F.
  2. Cook beef, onion and garlic in a large skillet over medium heat, stirring until beef is browned and crumbly; drain, and return to skillet.
  3. Season with salt and pepper to taste; stir in soup and sour cream.
  4. Layer half of potatoes in a greased 13- x 9-inch baking dish.
  5. Top with half of meat mixture; sprinkle with half of cheese.
  6. Repeat layers, cover with foil, and bake 45 minutes or until potatoes are fork tender.
  7. Uncover, and bake 15 minutes or until cheese is browned and bubbly.

  • 2 (10-oz) pkg frozen broccoli florets

Side Dish Instructions

  1. Steam broccoli according to package directions; season to taste.
