Quick Chicken Posole
Feta-Avocado SaladIngredients
- 2 zucchini, coarsely chopped
- 1½ cups chopped onion
- 1 Tbsp olive oil
- 1 tsp ground cumin
- ¾ cup mild salsa verde
- 6 cups gluten-free chicken broth
- 1 (29-oz) can hominy, drained and rinsed
- 3 cups shredded rotisserie chicken
Instructions
- Sauté zucchini and onion in hot oil in a large Dutch oven over medium heat 5 minutes. Add cumin, salsa, broth and hominy; simmer 15 minutes.
- Stir in chicken; simmer 3 to 4 minutes or until thoroughly heated.
Side Dish Ingredients
- 2 (5-oz) pkg mixed baby greens
- 1 avocado, pitted and cubed
- ½ cup roasted, salted sunflower kernels
- ⅓ cup crumbled feta cheese
- ⅓ cup mango chipotle vinaigrette (such as Kraft)
Side Dish Instructions
- Toss together all ingredients in a bowl.
