Individual Oven-Baked Denver Omelets

Ingredients

  • 3 Tbsp avocado oil, divided
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 large eggs, lightly beaten
  • 6 oz nitrite-free natural ham, chopped
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 avocado, pitted and sliced

Instructions

  1. Preheat oven to 375°F. Heat 2 Tbsp oil a large skillet over medium-high heat; add bell pepper, onion and garlic. sprinkle lightly with salt and pepper; cook 5 minutes or until tender.
  2. Meanwhile, grease 8 cups in a standard muffin pan; fill remaining 4 cups with water.
  3. Whisk together eggs, ham, bell pepper mixture, and ¼ tsp each salt and pepper. Pour egg mixture into greased muffin cups.
  4. Bake 15 to 18 minutes or until eggs are set. Top with avocado before serving.
