Sweet-and-Salty Honey-Glazed Shrimp

Ingredients

  • 1½ Tbsp honey
  • 1½ Tbsp low-sodium soy sauce
  • 1 clove garlic, minced
  • ½ tsp grated ginger
  • ¾ lb peeled and deveined, large raw shrimp
  • ½ Tbsp olive oil

Instructions

  1. Combine honey, soy sauce, garlic and ginger. Place shrimp in a large zip-top plastic bag; add half of honey mixture. Let stand 15 minutes; discard marinade.
  2. Cook shrimp in hot oil in a skillet over medium heat 2 minutes per side. Pour remaining half of honey mixture over shrimp; cook 1 minute or until shrimp turn pink. Serve over soba noodles.

Side Dish Ingredients

  • 3 oz soba noodles
  • 1½ cups broccoli slaw
  • 3 Tbsp Thai peanut sauce (such as Annie Chun's)
  • 2 Tbsp roasted, salted peanuts

Side Dish Instructions

  1. Cook noodles according to package directions; drain. Toss noodles with slaw and peanut sauce; sprinkle with peanuts.
