Thai Chicken Meatball Noodle Bowls
Ingredients
- ½ (8-oz) pkg brown rice noodles (such as Annie Chun's)
- 2 (12-oz) pkg teriyaki-and-pineapple chicken meatballs (such as Aidells)
- 2 (10.5-oz) pkg Asian chopped salad kits (such as Dole)
- 1 Tbsp dark sesame oil
- 1 seedless cucumber, thinly sliced
- ⅓ cup dry-roasted, unsalted peanuts
- 1 (1-oz) pkg fresh basil, thinly sliced
Instructions
- Cook noodles according to package directions.
- Prepare meatballs according to package directions; cool slightly.
- Toss together salad kit ingredients in a large bowl. Toss together noodles and oil in a second bowl.
- Divide salad among 6 bowls; top with noodles, meatballs, cucumber, peanuts, and basil.
