Thai Chicken Meatball Noodle Bowls

Ingredients

  • ½ (8-oz) pkg brown rice noodles (such as Annie Chun's)
  • 2 (12-oz) pkg teriyaki-and-pineapple chicken meatballs (such as Aidells)
  • 2 (10.5-oz) pkg Asian chopped salad kits (such as Dole)
  • 1 Tbsp dark sesame oil
  • 1 seedless cucumber, thinly sliced
  • ⅓ cup dry-roasted, unsalted peanuts
  • 1 (1-oz) pkg fresh basil, thinly sliced

Instructions

  1. Cook noodles according to package directions.
  2. Prepare meatballs according to package directions; cool slightly.
  3. Toss together salad kit ingredients in a large bowl. Toss together noodles and oil in a second bowl.
  4. Divide salad among 6 bowls; top with noodles, meatballs, cucumber, peanuts, and basil.
