Beefy Cheese Manicotti
Quick Italian SaladIngredients
- 1 (8-oz) pkg manicotti
- 1½ lb ground beef
- 2 (28-oz) cans crushed tomatoes with basil
- 1½ Tbsp Italian seasoning
- 1 (12-count) pkg mozzarella string cheese
- 1 (8-oz) pkg shredded mozzarella cheese
Instructions
- Preheat oven to 350°F.
- Cook manicotti shells according to package directions; drain and cool slightly.
- Cook beef in a large skillet over medium heat, stirring until beef is browned and crumbly; drain and return to skillet.
- Stir in tomatoes and Italian seasoning. Cook over low heat 5 minutes.
- Spoon half of beef mixture into a greased 13- x 9-inch baking dish.
- Place 1 string cheese in each manicotti shell. Arrange cheese-stuffed manicotti over meat sauce.
- Top manicotti with remaining meat sauce.
- Cover and bake 30 minutes.
- Uncover, sprinkle with shredded cheese, and bake 15 minutes longer or until bubbly.
Side Dish Ingredients
- 1 (10-oz) pkg Italian-style salad greens
- 2 tomatoes, chopped
- 1 seedless cucumber, chopped
- ½ cup favorite dressing
Side Dish Instructions
- Toss salad greens, tomatoes, cucumber and dressing in a bowl just before serving.
