Beefy Cheese Manicotti

Ingredients

  • 1 (8-oz) pkg manicotti
  • 1½ lb ground beef
  • 2 (28-oz) cans crushed tomatoes with basil
  • 1½ Tbsp Italian seasoning
  • 1 (12-count) pkg mozzarella string cheese
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F.
  2. Cook manicotti shells according to package directions; drain and cool slightly.
  3. Cook beef in a large skillet over medium heat, stirring until beef is browned and crumbly; drain and return to skillet.
  4. Stir in tomatoes and Italian seasoning. Cook over low heat 5 minutes.
  5. Spoon half of beef mixture into a greased 13- x 9-inch baking dish.
  6. Place 1 string cheese in each manicotti shell. Arrange cheese-stuffed manicotti over meat sauce.
  7. Top manicotti with remaining meat sauce.
  8. Cover and bake 30 minutes.
  9. Uncover, sprinkle with shredded cheese, and bake 15 minutes longer or until bubbly.

Side Dish Ingredients

  • 1 (10-oz) pkg Italian-style salad greens
  • 2 tomatoes, chopped
  • 1 seedless cucumber, chopped
  • ½ cup favorite dressing

Side Dish Instructions

  1. Toss salad greens, tomatoes, cucumber and dressing in a bowl just before serving.
