Grilled Chicken with Strawberry-Avocado Salsa

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 6 Tbsp fresh lime juice
  • 4 cloves garlic, minced
  • 3 Tbsp avocado oil
  • 1 Tbsp raw honey
  • 1 tsp grated lime rind
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 2 avocados, pitted and diced
  • 3 cups strawberries, sliced
  • ¼ cup chopped fresh cilantro
  • 1 jalapeño pepper, seeded and minced

Instructions

  1. Pound chicken to ½-inch thickness.
  2. Whisk together ¼ cup lime juice, garlic, 2 Tbsp oil, honey, lime rind, cumin, chili powder, and 1 tsp each salt and pepper in a bowl. Add chicken; toss. Let stand 15 minutes.
  3. Preheat grill or grill pan to medium-high heat. Toss together avocados, strawberries, cilantro, jalapeño, 2 Tbsp lime juice, 1 Tbsp oil, and salt and pepper to taste.
  4. Remove chicken from marinade; discard marinade. Grill chicken on a grill rack rubbed with olive oil, covered with grill lid, 5 to 7 minutes per side or until done.
  5. Serve salsa over chicken.

Side Dish Ingredients

  • 6 small sweet potatoes
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 3 Tbsp pure maple syrup
  • 3 Tbsp ghee

Side Dish Instructions

  1. Preheat grill to medium-high heat.
  2. Pierce sweet potatoes with a fork, and wrap in foil. Grill potatoes 20 to 30 minutes or until tender, turning occasionally.
  3. Cut a slit in each potato; sprinkle evenly with salt and pepper, drizzle with maple syrup, and top with ghee.
