Skillet Creole Chicken Thighs

Ingredients

  • 2 Tbsp avocado oil
  • 2 lb boneless, skinless chicken thighs
  • 1 Tbsp salt-free Cajun-Creole seasoning (such as Spice Hunter)
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 large tomatoes, chopped

Instructions

  1. Heat oil in a large, deep skillet over medium-high heat. Sprinkle chicken thighs with seasoning and desired amount of salt and pepper.
  2. Cook chicken, in batches, 3 minutes per side or until browned; remove from skillet.
  3. Add garlic, celery, onion, bell pepper and tomatoes to skillet; sprinkle lightly with salt and pepper. Sauté 4 to 5 minutes or until tender.
  4. Return chicken to skillet; cover and cook 5 to 6 minutes or until chicken is done. Serve chicken over Rosemary-Garlic Mashed Cauliflower.

  • 2 Tbsp avocado oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp dried rosemary
  • 1 cup organic chicken bone broth
  • 2 (12-oz) pkg cauliflower florets
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add onion, garlic and rosemary; cook 5 minutes or until onion is tender, stirring occasionally. Add broth and cauliflower.
  3. Bring to a boil; reduce heat, cover and simmer 15 minutes or until cauliflower is tender. Remove from heat.
  4. Mash cauliflower mixture with a potato masher; stir in salt and pepper.
