Skillet Creole Chicken Thighs
Rosemary-Garlic Mashed Cauliflower
Ingredients
- 2 Tbsp avocado oil
- 2 lb boneless, skinless chicken thighs
- 1 Tbsp salt-free Cajun-Creole seasoning (such as Spice Hunter)
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 large tomatoes, chopped
Instructions
- Heat oil in a large, deep skillet over medium-high heat. Sprinkle chicken thighs with seasoning and desired amount of salt and pepper.
- Cook chicken, in batches, 3 minutes per side or until browned; remove from skillet.
- Add garlic, celery, onion, bell pepper and tomatoes to skillet; sprinkle lightly with salt and pepper. Sauté 4 to 5 minutes or until tender.
- Return chicken to skillet; cover and cook 5 to 6 minutes or until chicken is done. Serve chicken over Rosemary-Garlic Mashed Cauliflower.

- 2 Tbsp avocado oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tsp dried rosemary
- 1 cup organic chicken bone broth
- 2 (12-oz) pkg cauliflower florets
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Heat oil in a large skillet over medium-high heat.
- Add onion, garlic and rosemary; cook 5 minutes or until onion is tender, stirring occasionally. Add broth and cauliflower.
- Bring to a boil; reduce heat, cover and simmer 15 minutes or until cauliflower is tender. Remove from heat.
- Mash cauliflower mixture with a potato masher; stir in salt and pepper.
