Garden Vegetable Beef Skillet
Ingredients
- ¾ lb ground beef
- 1 yellow squash, halved lengthwise and sliced
- 1 zucchini, halved lengthwise and sliced
- 1 (8-oz) pkg baby portobello mushrooms, quartered
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 cup grape tomatoes, cut in half
- 1 tsp Italian seasoning
Instructions
- Cook beef in a nonstick skillet over medium heat, stirring until browned and crumbly; drain and wipe skillet clean.
- Sauté squash, zucchini, mushrooms and garlic in hot oil in skillet over medium heat 6 to 8 minutes or until crisp-tender.
- Add tomatoes and seasoning; cook, stirring often, 4 minutes. Return beef to skillet; cook 3 minutes or until thoroughly heated. Season with salt and pepper to taste.
