Garden Vegetable Beef Skillet

Ingredients

  • ¾ lb ground beef
  • 1 yellow squash, halved lengthwise and sliced
  • 1 zucchini, halved lengthwise and sliced
  • 1 (8-oz) pkg baby portobello mushrooms, quartered
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 cup grape tomatoes, cut in half
  • 1 tsp Italian seasoning

Instructions

  1. Cook beef in a nonstick skillet over medium heat, stirring until browned and crumbly; drain and wipe skillet clean.
  2. Sauté squash, zucchini, mushrooms and garlic in hot oil in skillet over medium heat 6 to 8 minutes or until crisp-tender.
  3. Add tomatoes and seasoning; cook, stirring often, 4 minutes. Return beef to skillet; cook 3 minutes or until thoroughly heated. Season with salt and pepper to taste.
