Oven-Fried Pork Chops
Green Beans with Pecans and Mashed Sweet Potatoes
Ingredients
- 2 large eggs
- 2 Tbsp milk
- 1 (6-oz) pkg herb-seasoned stuffing mix
- 2 lb boneless pork loin chops
Instructions
- Preheat oven to 450ºF; lightly grease a rimmed baking pan and place in oven to preheat while oven preheats.
- Whisk together eggs and milk in a shallow dish.
- Place stuffing mix in a separate shallow dish.
- Dip pork chops in egg mixture; dredge in stuffing mix to coat.
- Carefully remove pan from oven and place pork chops on hot pan.
- Bake 15 to 20 minutes or until pork is done.
Side Dish Ingredients
- 2 (8-oz) pkg thin green beans
- 1 Tbsp butter
- ¾ cup chopped pecans
- 1 (24-oz) carton refrigerated mashed sweet potatoes
Side Dish Instructions
- Steam green beans according to package directions.
- Melt butter in a skillet over medium heat; add pecans, and cook, 5 minutes or until toasted. Stir in beans and season to taste.
- Heat sweet potatoes according to package directions.
