Oven-Fried Pork Chops

Green Beans with Pecans and Mashed Sweet Potatoes

Ingredients

  • 2 large eggs
  • 2 Tbsp milk
  • 1 (6-oz) pkg herb-seasoned stuffing mix
  • 2 lb boneless pork loin chops

Instructions

  1. Preheat oven to 450ºF; lightly grease a rimmed baking pan and place in oven to preheat while oven preheats.
  2. Whisk together eggs and milk in a shallow dish.
  3. Place stuffing mix in a separate shallow dish.
  4. Dip pork chops in egg mixture; dredge in stuffing mix to coat.
  5. Carefully remove pan from oven and place pork chops on hot pan.
  6. Bake 15 to 20 minutes or until pork is done.

Side Dish Ingredients

  • 2 (8-oz) pkg thin green beans
  • 1 Tbsp butter
  • ¾ cup chopped pecans
  • 1 (24-oz) carton refrigerated mashed sweet potatoes

Side Dish Instructions

  1. Steam green beans according to package directions.
  2. Melt butter in a skillet over medium heat; add pecans, and cook, 5 minutes or until toasted. Stir in beans and season to taste.
  3. Heat sweet potatoes according to package directions.
