Corn and Tomato Salad with Bacon
Ingredients
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- 2 tsp whole-grain mustard
- 2 tsp honey
- 1 (5-oz) pkg baby arugula
- 8 slices bacon, cooked and crumbled
- 6 ears corn, shucked and kernels removed
- 1 red bell pepper, chopped
- 1 pint grape tomatoes, halved
- 2 (3.5-oz) pkg honey roasted pecan pieces
Instructions
- Whisk together oil, lemon juice, mustard, and honey in a large bowl; add arugula, bacon, corn, bell pepper, tomatoes, and pecans.
- Toss, and serve immediately.
