Marinate Ahead and Grill
Citrus-Jerk Pork Chops
Pineapple-Coconut Cauli-Rice
Ingredients
- ¼ cup coconut aminos soy-free sauce
- ¼ cup fresh orange juice
- ¼ cup fresh lime juice
- 1 Tbsp raw honey
- 1 Tbsp all-natural, sugar-free Jerk seasoning
- ½ tsp hot sauce
- 2 (6-oz) boneless, center-cut loin pork chops
- Chopped fresh thyme
Instructions
- Combine coconut aminos, orange juice, lime juice, honey, seasoning and hot sauce in a zip-top plastic bag; add pork chops. Seal and refrigerate 2 hours or overnight.
- Preheat grill or grill pan to medium-high heat. Remove pork chops from marinade; discard marinade.
- Grill chops 4 minutes per side or until done; sprinkle with thyme.
Side Dish Ingredients
- 1 (12-oz) pkg cauliflower florets
- 1 Tbsp coconut oil
- ¼ cup unsweetened coconut milk
- 1 Tbsp lime juice
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup diced pineapple
- ¼ cup chopped fresh cilantro
Side Dish Instructions
- Pulse florets in a food processor, in batches, until rice-like consistency. Heat oil in a large saucepan over medium heat. Add cauliflower to pan; cook 4 minutes, stirring frequently.
- Stir in coconut milk, lime juice, salt and pepper. Cook 4 minutes or until creamy. Stir in pineapple and cilantro.
