Citrus-Jerk Pork Chops

Ingredients

  • ¼ cup coconut aminos soy-free sauce
  • ¼ cup fresh orange juice
  • ¼ cup fresh lime juice
  • 1 Tbsp raw honey
  • 1 Tbsp all-natural, sugar-free Jerk seasoning
  • ½ tsp hot sauce
  • 2 (6-oz) boneless, center-cut loin pork chops
  • Chopped fresh thyme

Instructions

  1. Combine coconut aminos, orange juice, lime juice, honey, seasoning and hot sauce in a zip-top plastic bag; add pork chops. Seal and refrigerate 2 hours or overnight.
  2. Preheat grill or grill pan to medium-high heat. Remove pork chops from marinade; discard marinade.
  3. Grill chops 4 minutes per side or until done; sprinkle with thyme.

  • 1 (12-oz) pkg cauliflower florets
  • 1 Tbsp coconut oil
  • ¼ cup unsweetened coconut milk
  • 1 Tbsp lime juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 cup diced pineapple
  • ¼ cup chopped fresh cilantro

Side Dish Instructions

  1. Pulse florets in a food processor, in batches, until rice-like consistency. Heat oil in a large saucepan over medium heat. Add cauliflower to pan; cook 4 minutes, stirring frequently.
  2. Stir in coconut milk, lime juice, salt and pepper. Cook 4 minutes or until creamy. Stir in pineapple and cilantro.
