Ingredients

  • 1½ lb lean ground beef
  • 1½ cups diced onion
  • 1 (16-oz) pkg frozen peas and carrots
  • 1¾ cups low-sodium beef broth
  • 2 Tbsp cornstarch
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp tomato paste
  • ¼ tsp salt
  • ½ tsp pepper
  • 1 (24-oz) container refrigerated mashed potatoes

Instructions

  1. Cook ground beef and onion in a large skillet over medium heat 8 minutes or until meat is browned and onion is tender. Add peas and carrots.
  2. Whisk together broth, cornstarch, Worcestershire sauce, tomato paste, salt, and pepper.
  3. Add broth mixture to skillet. Cook 3 to 5 minutes or until sauce is thickened. Transfer to a broiler-safe 3-quart baking dish.
  4. Meanwhile, preheat broiler with oven rack on second shelf. Prepare mashed potatoes according to package directions.
  5. Top beef mixture with mashed potatoes.
  6. Broil, watching closely, 8 to 10 minutes or until browned and bubbly.
