Chicken and Refried Bean Tostadas
Spicy Mango Toss
Ingredients
- 1½ lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp ground cumin
- ¼ tsp chili powder
- 6 (8-inch) whole wheat tortillas
- 1 (16-oz) can BPA-free refried black beans
- 2 romaine lettuce hearts, shredded
- 2 avocados, pitted and diced
- 1 (16-oz) container refrigerated fresh salsa
- ½ cup thinly sliced red onion
- ¼ cup chopped fresh cilantro (or use flat-leaf parsley)
Instructions
- Preheat oven to 375°F.
- Sprinkle chicken with salt, pepper, cumin and chili powder; place in a lightly greased baking dish.
- Bake 20 to 25 minutes or until juices run clear. Cool slightly, and shred.
- Coat tortillas with cooking spray, and toast in oven 2 to 3 minutes. Spread refried beans evenly over warm tortillas. Top with lettuce, avocado, salsa, onion and cilantro.

- 3 mangoes, seeded and cut into ½-inch thick pieces
- 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
- ¼ cup fresh lime juice
- ¼ tsp cayenne pepper
Side Dish Instructions
- Combine all ingredients in a medium bowl; chill until ready to serve.
