Chicken and Refried Bean Tostadas

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp ground cumin
  • ¼ tsp chili powder
  • 6 (8-inch) whole wheat tortillas
  • 1 (16-oz) can BPA-free refried black beans
  • 2 romaine lettuce hearts, shredded
  • 2 avocados, pitted and diced
  • 1 (16-oz) container refrigerated fresh salsa
  • ½ cup thinly sliced red onion
  • ¼ cup chopped fresh cilantro (or use flat-leaf parsley)

Instructions

  1. Preheat oven to 375°F.
  2. Sprinkle chicken with salt, pepper, cumin and chili powder; place in a lightly greased baking dish.
  3. Bake 20 to 25 minutes or until juices run clear. Cool slightly, and shred.
  4. Coat tortillas with cooking spray, and toast in oven 2 to 3 minutes. Spread refried beans evenly over warm tortillas. Top with lettuce, avocado, salsa, onion and cilantro.

Side Dish Ingredients

  • 3 mangoes, seeded and cut into ½-inch thick pieces
  • 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
  • ¼ cup fresh lime juice
  • ¼ tsp cayenne pepper

Side Dish Instructions

  1. Combine all ingredients in a medium bowl; chill until ready to serve.
