Blackened Fish Tacos
Easy Red Rice
Ingredients
- ¾ lb frozen tilapia fillets, thawed and pat dry
- ½ Tbsp blackened seasoning
- 2 Tbsp butter
- ⅓ cup sour cream
- ⅓ cup salsa
- 1 Tbsp fresh lime juice
- ½ (18-oz) pkg corn tortillas
- ½ (10-oz) pkg angel hair coleslaw
- 1 avocado, pitted and sliced
Instructions
- Sprinkle fish with blackened seasoning. Melt butter in a nonstick skillet over medium heat. Add fish, and cook, 5 to 6 minutes per side or until fish flakes with a fork. Meanwhile, stir together sour cream, salsa and lime juice.
- Flake fish into large pieces. Heat desired number of tortillas according to package directions. Serve fish in warm tortillas with coleslaw, sour cream mixture and avocado.
Side Dish Ingredients
- ½ cup long-grain white rice
- ½ Tbsp olive oil
- ¼ cup finely chopped onion
- 1 small clove garlic, minced
- ½ Tbsp tomato paste
- ½ tsp dried oregano
Side Dish Instructions
- Cook rice according to package directions.
- Heat oil in a skillet over medium-high heat. Add onion and garlic; cook 4 minutes, stirring often. Stir in tomato paste; cook 2 minutes. Remove from heat; stir in hot cooked rice and oregano. Season with salt and pepper to taste.
