Southwestern Sausage and Scrambled Eggs with Avocado

Ingredients

  • 8 large eggs
  • ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp avocado oil
  • ½ lb lean ground turkey breakfast sausage
  • 1 clove garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup chopped onion
  • 2 avocados, pitted and sliced

Instructions

  1. Whisk together eggs, cumin, salt and pepper; set aside.
  2. Heat oil in large skillet over medium heat. Add sausage; cook 5 to 6 minutes or until sausage is no longer pink, stirring to crumble. Transfer sausage to a plate, reserving drippings in skillet.
  3. Add garlic to drippings in skillet; cook 30 seconds or until fragrant. Add bell pepper and onion; cook 6 to 8 minutes or until tender.
  4. Return sausage to skillet. Add eggs; cook 4 minutes or until eggs are thickened and set, stirring constantly. Serve with avocado slices on the side.
