Baked Cod with Tomatoes and Parsley
Lemon-Feta Mashed Potatoes
Ingredients
- 1 pint grape tomatoes
- 1 clove garlic, minced
- ½ Tbsp olive oil
- 2 Tbsp light butter
- 1½ Tbsp chopped fresh parsley
- ⅛ to ¼ tsp crushed red pepper (optional)
- 2 (6-oz) cod fillets
- ¼ tsp salt
- ⅛ tsp black pepper
Instructions
- Preheat oven to 400°F. Sauté tomatoes and garlic in hot oil in a large nonstick skillet over medium-high 5 minutes or until tomatoes burst. Stir in butter, parsley, and, if desired, red pepper.
- Place fish in a small greased baking dish. Sprinkle with salt and black pepper. Top with tomato mixture.
- Bake 12 to 15 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)
- ½ cup crumbled feta cheese
- 1 Tbsp lemon juice
Side Dish Instructions
- Heat potatoes according to package directions. Stir in cheese and lemon juice.
