Baked Cod with Tomatoes and Parsley

Ingredients

  • 1 pint grape tomatoes
  • 1 clove garlic, minced
  • ½ Tbsp olive oil
  • 2 Tbsp light butter
  • 1½ Tbsp chopped fresh parsley
  • ⅛ to ¼ tsp crushed red pepper (optional)
  • 2 (6-oz) cod fillets
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions

  1. Preheat oven to 400°F. Sauté tomatoes and garlic in hot oil in a large nonstick skillet over medium-high 5 minutes or until tomatoes burst. Stir in butter, parsley, and, if desired, red pepper.
  2. Place fish in a small greased baking dish. Sprinkle with salt and black pepper. Top with tomato mixture.
  3. Bake 12 to 15 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)
  • ½ cup crumbled feta cheese
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Heat potatoes according to package directions. Stir in cheese and lemon juice.
