Bacon-Wrapped Pork Loin

Ingredients

  • 2 Tbsp kosher salt
  • 1 Tbsp onion powder
  • 1 Tbsp garlic powder
  • 1 Tbsp chili powder
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp cayenne pepper
  • 1 (4-lb) pork loin, trimmed
  • 2 Tbsp pure maple syrup
  • 1 (12-oz) pkg nitrite-free bacon

Instructions

  1. Stir together first 7 ingredients in a small bowl. Rub pork with syrup, and sprinkle all over with spice mixture.
  2. Wrap pork with bacon, 1 strip at a time, completely covering pork; let stand at room temperature 30 minutes.
  3. Preheat oven to 350°F. Place pork on a rack in a broiler pan rubbed with coconut oil.
  4. Bake 1 to 1½ hours or until a meat thermometer reads 145°F. Let stand 10 minutes before slicing.

Side Dish Ingredients

  • 4 cups chopped kale
  • 4 cups chopped radicchio
  • 3 Tbsp extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • 1 Tbsp Dijon mustard
  • 1 tsp kosher salt
  • 1 tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a large bowl until blended. Let stand 10 minutes to wilt.
