Bacon-Wrapped Pork Loin
Kale-Radicchio SaladIngredients
- 2 Tbsp kosher salt
- 1 Tbsp onion powder
- 1 Tbsp garlic powder
- 1 Tbsp chili powder
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp cayenne pepper
- 1 (4-lb) pork loin, trimmed
- 2 Tbsp pure maple syrup
- 1 (12-oz) pkg nitrite-free bacon
Instructions
- Stir together first 7 ingredients in a small bowl. Rub pork with syrup, and sprinkle all over with spice mixture.
- Wrap pork with bacon, 1 strip at a time, completely covering pork; let stand at room temperature 30 minutes.
- Preheat oven to 350°F. Place pork on a rack in a broiler pan rubbed with coconut oil.
- Bake 1 to 1½ hours or until a meat thermometer reads 145°F. Let stand 10 minutes before slicing.
Side Dish Ingredients
- 4 cups chopped kale
- 4 cups chopped radicchio
- 3 Tbsp extra virgin olive oil
- 3 Tbsp red wine vinegar
- 1 Tbsp Dijon mustard
- 1 tsp kosher salt
- 1 tsp pepper
Side Dish Instructions
- Toss together all ingredients in a large bowl until blended. Let stand 10 minutes to wilt.
